I would say boudin and fresh sausage from Nunu's.

Don't sleep on Rascal's if you don't want smoked boudin. I like their PJ boudin balls better than Billy's. They use a better cheese, it's creamy and not a clump of glue. Early's grocery is another option in that area for boudin/cracklin

Boudin Balls = Ronnies
Boudin = NuNu or Best Stop
Boudin Tots = Dons
Large Boudin Ball = Billys
Smoked Boudin = Best Stop
Ribeye Sausage = Dons
Andouille = Wayne Jacobs, Best Stop if in laffy.
Cracklin = Whomever has them right out of the fryer.

Ray's Boudin in Opelousas fits the "liver" bill here. Great tasting boudin and not as greasy as some of the others mentioned here.
