I would say boudin and fresh sausage from Nunu's.

If you go to Heberts's pass on the chicken and get a stuffed duck

Which boudin has that real amount of liver, fin?

The best boudin I've had is from T-Boy's in Mamou

Dons probably has more liver than the rest

Don't sleep on Rascal's if you don't want smoked boudin. I like their PJ boudin balls better than Billy's. They use a better cheese, it's creamy and not a clump of glue. Early's grocery is another option in that area for boudin/cracklin

I'm a big fan of Mowata Store boudin

Don's boudin is good but tends to pack a little more heat than most. If you like yours extra spicy, this is your place.
Not many will agree, but it's my top place. We used to get links pretty much every weekend from the Carencro location in my youth.

I can't figure out why nobody has opened a boudin/specialty meat place in Houston

Boudin Balls = Ronnies
Boudin = NuNu or Best Stop
Boudin Tots = Dons
Large Boudin Ball = Billys
Smoked Boudin = Best Stop
Ribeye Sausage = Dons
Andouille = Wayne Jacobs, Best Stop if in laffy.
Cracklin = Whomever has them right out of the fryer.

Ray's Boudin in Opelousas fits the "liver" bill here. Great tasting boudin and not as greasy as some of the others mentioned here.

Earl's on Verot has better stuffed chickens than Hebert's.
Took your advice. Stuffed with crawfish and Tasso cornbread.

Hebert's has a place in Houston.
