And you don't have to eat the peppers. It's about getting some heat into the meat.

I use about 2 lbs of habanero in mine. It gives it flavor and heat

I love peppers so I can't see how it could be bad, whether habaneros or jalapeños.

there are a few that boil (in seasoning, not just water) and sprinkle when they put in ice chest. i don't really mind it for the extra flavor, but it makes a damn mess for sure. not every place in shreveport does it this way, and certainly not as common for backyard boils.

fwiw, i'm not really a fan of the sprinkle, but i haven't met many crawfish i don't like. the worst by far was at bass pro shop in springfield, mo. they boiled in water and sprinkled a tad of tony's like substance on there. they looked deceivingly good.... it was so awful.

also i have had some pretty terrible crawfish in houston that the locals were raving about. it was pretty similar - lightly seasoned boil, sprinkle.
