What's your best breakfast casserole recipe

I dont really follow a recipe I just mix some shite together and bake it.

Typically though Ill cook some bacon in a skillet then saute some onion, bellpepper and mushrooms in the bacon fat. set all that off to the side. Chop up some spinach and the bacon. Whip however many eggs you want to cook and throw in the rest of the stuff you cooked. add cheese and cook until eggs are done. 15-20 min?

Sorry, I don't have one. But I've had a few hash brown casseroles that were amazing. There was a caterer in Birmingham that would cater my old company's Thanksgiving and Christmas, and they did a wicked good hash brown casserole. Would love to hear a good recipe.

Ours are either Egg based or Grits based.

Bacon if I'm going Grits, Sausage if I'm going eggs.

Basically fry up some bacon or cook some ground sausage, scoop it out and then cook peppers and onions in the fat. Mix all of that in with the grits/eggs and toss in some fresh grated cheddar and bake until it sets.

Start with 1-2 inch steamed basmati rice base in lightly buttered casserole dish. Lightly brown a pound or two of country sausage in 3/4 inch pieces and set aside. Sauté onions and celery in butter and mix with sausage. Make a tan béchamel using some of the sausage renderings and thyme. Scatter sausage, onion and celery over rice and cover with béchamel. Cook in oven at 325 until béchamel bubbles.

I'm sure you cold do this over cooked hash browns or cooked Tater tots if you like.

Serve with eggs and biscuits.
