Made some meatballs, seasoned and put them in the smoker for an hour at 180. Took then off, smashed and seared on the Blackstone for burgers. Turned out great.
And then there was the pastrami.
Bought a 3.5 lb corned brisket at Sam’s yesterday. Soaked it in water overnight to take some of the salt out of it. Then, like a dumb son of a bitch, added salt right back to the rub. Smoked it to the perfect doneness on my RecTec at 250°. Probed tender, removed and wrapped in foil to rest for a couple of hours. Unwrapped to slice. SALT BOMB!! Threw it away. It was my first go at pastrami. Live and learn. Oh well.
