Here is my favorite and easy way to make Mexican rice. And you don't need a rice cooker.

Put a third of a stick of butter in a large skillet at medium heat. Pour a half cup to 2/3 cup of raw rice in and stir so that the kernels are coated with butter.
Reduce heat to simmer.

Pour in a small can of tomato sauce and then 1.5 cans of water.

Add cumin and pepper and cover with lid.

It will steam at simmer for 20 minutes, then open lid, stir to avoid bottom burning. Cover again and cook another 15 minutes on simmer.

the guys stuffed chicken breasts 3 ways last night- cream cheese and jalapeno, bleu cheese, and pepperjack then wrapped in bacon. going on the grill.

I made white bean and rabbit stew with a seasoned rabbit from best stop, some italian sausage links (they had no real andouille at WF in Houston). Some people went fishing last weekend and will be grilling trout, tuna and mahi. Hopefully I get there before they put the tuna on the grill to save it.
