Used to love the chicken parmigan.When the wife and I were dating we would go to the one on Coursey.Brings back some good memories.

Hey, I found even more Semolina's recipes in my files. I can't say for sure if all are authentic and the comments belong to the recipe, not me. Here ya go:

Semolina's BBQ Pasta

Here is Semolina's Bbq Pasta as seen on the public tv station here in new orleans during a fund raiser...It is my favorite dish at semolina's:

1 lb boneless chicken breasts, cut into 2" chunks
1/2 cup sliced red onion
1/2 cup green bell pepper, cut into large chunks
2 toes garlic, minced
1 cup basic marinara (tomato) sauce
2 cups any favorite BBQ sauce
1/4 cup fresh cilantro leaves, minced
1/4 tsp BBQ spice

1. Saute' the first 4 ingredients in a small amount of corn oil (about 4 tabsp.) until chicken is cooked and veggies Are soft

2. Add the remaining ingredients and heat thoroughly.

3. Pour sauce over 1 lb. Cooked pasta...Your choice..And top with shredded gouda and provalone cheese....About 1 cup of each. Decorate with a sprinkle of extra cilantro leaves and some thinly sliced green onions.

Semolina's Chicken Cordon Bleu Pasta

Posted in response to a recipe request. Found in an online search. The amounts of pasta and Alfredo sause were not designated, so I estimated. Prep time and servings is also an estimate. A positive spin would be: The recipe calls on one's cooking knowledge and judgment to complete this dish! :D It sounds good and I'm going to try this soon

3 oz chicken breasts, skinned, boned, & cubed
2 oz ham, cubed
1/2 oz vegetable oil
1/2 tsp garlic, minced
1/4 tsp parsley, chopped
4 oz penne rigate, cooked
1 cup Fontina cheese, shred
1 Tbs parmesan cheese
1 Tbs breadcrumbs ( garlic bread crumbs preferred)
2 cups alfredo sauce

1. Brown chicken; add ham, garlic and parsley.

2. Add Alfredo sauce.

3. Heat and toss with pasta.

4. Put in casserole; top with bread crumbs, parmesan, and fontina.

5. Place under broiler and brown.

Semolina's Chicken Parmesan

Chicken Parmesan features two Parmesan-crusted chicken breasts sandwiched around provolone cheese, served over linguine in Alfredo sauce and topped with marinara

2 Tbs olive oil
2 breaded chicken breasts
1/2 cup provolone cheese
1 cup cooked linguine
1/2 cup marinara sauce
1/2 cup Alfredo sauce
2 Tbs parmesan cheese
Chopped parsley
Crushed red pepper

1. Saute chicken breasts in oil until light brown and completely cooked.

2. Place the cooked pasta in a serving plate, ladle the Alfredo sauce over the pasta. Place one chicken breast on top of the sauce, layer provolone cheese on top of the chicken then stack the remaining breast on top of the cheese.

3. Ladle 1/2 cup marinara sauce over the chicken and garnish with parmesan, parsley and crushed red pepper.

Semolina's Double Cheeseburger Pasta

8 oz hamburger
2 oz BBQ Marinara (1/2 BBQ sauce, 1/2 marinara sauce)
2 oz red onions (1/2 slices)
4 oz cheese sauce 1 cup shredded Cheddar cheese 10 ounces cooked rigatoni 1/2 cup Durkee Potato Sticks 1/2 cup lettuce (shredded)
4 slices Roma tomatoes
1 oz sesame seeds
3 pickle slices

1. Sauté hamburger and red onion until desired doneness (rare, medium, etc.). Break into 8 pieces.

2. Add 10 ounces heated rigatoni. Toss and heat for one minute.

3. Place 2 ounces BBQ Marinara on bottom of bowl and place pasta and meat on top.

4. Add cheese sauce. Garnish with sesame seeds, lettuce, tomato slices, potato sticks, and pickles.

Servings: 1

Semolina's Shrimp Bangkok

1 Tbs Sesame oil
12 md Shrimp; peel, devein
1 Tbs Fresh basil; chop
1 Tbs Green onion; chop
1/4 tsp Vietnamese Hot Chili Garlic

Sauce
1/8 cup Black beans; rinse
10 oz Angel hair pasta; cook

Bangkok Broth
6 Tbs Shrimp stock
3 Tbs Soy sauce
3 Tbs Rice wine

Garnish
1 cup Mung bean sprouts
1/4 cup Carrot sticks
1 Tbs Green onion slivers
1 Tbs Pickled ginger slivers
1 Tbs Fresh basil; cut into

1. Place the sesame oil, shrimp, basil, green onion, hot chili sauce and black beans into a skillet. Cook until the shrimp are about 3/4 of the way done.

2. Add the Bangkok broth and bring to a boil. Add the cooked pasta and heat thoroughly.

3. Pour the completed pasta dish into a deep serving bowl and garnish with the remaining ingredients.

Servings: 2
