You've got enough meat/protein for a series of stir fry meals. Defrost (anything but the ham hock) and cut into small bite sized piece; stir fry w/your favorite veg (zucchini, carrots, onions, garlic, ginger) and a bottled stir fry sauce (or make your own, if you're feeling less lazy than me). I like the bottled General Cho's sauce, or House of Tsang's bangkok thai peanut sauce.
The ham hock should go into a pot of beans. Soak your favorite dried beans overnight, drain & put into a slow cooker then next AM w/onions, ham hock, other appropriate seasonings for your bean choice. Cook for 10 hrs, or until the beans are tender.

When I have small portions of leftover meat like this, I like to cook some pasta, add butter so you end up with butter noodles, and add in bite size chunks of the meat. Melt in some shredded cheese as well.
