What to do with 7 lb of ground blade roast

My butcher just screwed up my order basically I ended up with 7 lb of ground blade roast. I didn't want to make him eat it so I bought it anyway. But what in God's name should I cook with it?

I don't freeze beef. So it needs to be big

It's the only meat I notice a mealy texture after.
