What flavors would go good in a plum based hot sauce? (Edit)

Picked up a few at the grocery store for the purpose of making a sauce but not sure what flavors would go well. Will definitely use honey, sweet onion and garlic. Was kind of thinking asian flavors but not sure. Any ideas?
I hadn’t had a persimmon since I was a kid. Tasted one and decided it was not the flavor I was going for. Decided to go with plums if my wife can find some. Thinking of using ghost peppers, plums, soy sauce, fish sauce , ground ginger, ground mustard, lime juice, maybe a combination of apple cider vinegar and rice vinegar. Maybe some ground clove or Chinese five spice?

I got you! I've never cooked with persimmons but here's what my book says.

are you trying to accentuate the persimmon flavor or are you trying to compliment it with other flavors?
Five spice immediately comes to mind when reading the thread title. I've used it with peaches and had good results. Try Saigon or ceylon cinnamon in place of standard cassia for a warmer sensation.
Honey seems like a great sweetener option for this application.
What's your intended heat source?
Fresh or Dried?
Habanero seems like the obvious option but, pasilla and ancho (especially with dates and tamarind) could work nicely. Cascabel also do well in sweet applications.
