Isn’t it a lot more expensive?

Not a lot more. Modestly more for a quality that is worth paying for.

A 12 oz dinner ribeye at the Baton Rouge location of Longhorn is $21.49. Their only other ribeye option is a 20 oz bone-in for $26.99,

A 12 oz ribeye at Saltgrass in Baton Rouge is $23.99. But you should get the 16oz cuz it’s thicker (more likely to be cooked to a perfect medium rare, and is only $26.99

4 ribeye options at Saltgrass (they also offer a 10 oz and a 21 oz bone in ribeye), 2 at Longhorn.

With the exception of Joe’s Crab Shack, most of Landry Corporations other 70+ restaurants are pretty solid.
