IRL, Darla is a well known NASCAR Driver and may not be back here tonight if the team's car needs prepping for the next race at Talladega or Darlington, or wherever. I don't want to say much so I don't upset her begore a race. Anyhow, I will attempt to answer your question.

You cook the cheese on a piece of parchment paper in the oven. You can take your favorite melting cheese (Parmesan, Gouda, Swiss) and use that to make the buns. If using sliced, round slices work best. You can also used grated cheese, oiled up in a round pile. Make your buns the size and thickness you like and them melt them in the oven. Miss Darla adds spices to her cheese before melting it. Maybe chives, or parsley or cilantro or whatever. Melt it at a descent temperature for melting the cheese and pull it when it looks right. Allow it to cool enough for you to handle and you have your no carb bun for low carb dining.

Cheese Buns for two sandwiches:

1 cup shredded mozz
1/2 cup grated parm
2 eggs
Optional seasoning (I use Trader Joe's Everything But the Bagel)

Preheat oven to 350

Stir the ingredients until they are well combined. Divide the mix into four parts and spoon onto parchment paper, shaping into circles. Bake for 15 - 20 minutes.

ETA: Last night I misremembered the recipe and only used one egg. As I was mixing, I noticed it wasn't "wet" enough, but instead of adding a second egg, I added a little mayo. I really liked the result because it was less "eggy" than previous versions.



Opinion: I think the sandwich is tastier when you've got something like Dijon and pickles to balance the cheese in the bun. This was pastrami, Dijon, dill slices, red onion, and Swiss cheese.

Thanks, Darla and MD! I do Parmesan crisps occasionally, and this is a similar method.
