Trust me, they got a good bit darker. Pretty dark brown like. I just forgot to snap a picture before I added the wine and beef stock. When I cook French Onion, it's always pretty much a 2 hour process.

The last few times, I've put mine in the oven. Slower process, but I liked the result. Can't remember where I read about doing that. Takes me a long time to make that soup, also. It takes patience.

I vary the liquor, too. Sometimes, brandy. Sometimes sherry or red wine.

I've always alternated between these two. I haven't tried brandy, but I'll be giving that a whirl next time. Did you like the oven method better? I'll do some searching for an oven recipe. Thanks for the suggestion!

The oven method took longer, but was less labor intensive because the onions aren't on direct heat. No worries about burning anything at all. It's been awhile since I made it. I'm going to have look around and see if I made notes about it.

I believe it was either a Cook's Illustrated method or Alton Brown. I'm guessing, though.
