Verde Rice recipe

looking for a good Verde rice recipe. Not many places make it in Baton Rouge anymore.

You need to substitute some green salsa for the water when you cook your rice. I make a red ‘Mexican Rice’ by cooking a small diced onion in some olive oil until it starts to soften. Add 1 cup jasmine rice, 1-1/4 cup chicken broth, 1/2 cup Mateo’s salsa and a bay leaf. Bring to a boil, put the lid on it, turn the heat to low and cook for 20 minutes like you would normally do for rice.
