Vegas tasting menu pick

Brothers and sisters of the food board help me pick a tasting menu experience for the wife and I. We are in Vegas and have these options:

I don’t know about those only have been to Sage in Aria. Fantastic . Beer pairing and wine pairing available. I’ve done the beer pairing and was really good. Prolly $75 up charge per head but not sure.
