Turkey Thigh Dinner Ideas

I have (4) bone-in turkey thighs. Give me some dinner ideas for these. Anything but fried.

I don't have a recipe for you, but I absolutely love the turkey wings & necks found in your typical rent party/benefit lunch/soul food neighborhood restaurant. Cooked until fall off the bone, beautifully browned, with a sort of sticky pan gravy. I need to learn to make that.

I smoked some thighs this weekend then dropped them in the fryer for a couple minutes—I know you said not fried but they were fantastic. Smoky and juicy with just enough crispness to the skin.

I agree. Smoke them. If you don't want to fry them for crispiness, just put them under your broiler or in a hot grill for 5-10 minutes after smoking them.

I'm pretty sure that an oven braise yields the ultra browned wings I will eventually replicate....
