Turkey fry oil

How long will the oil stay good after frying a turkey. Last year's oil still good? Doesn't look or smell bad...

Pretty much depends on how it was stored. I've used oil from the year before. Trust me, you will know if the oil has gone off and if in doubt, play it safe and get fresh oil.
I fry 5-6 turkeys for Thanksgiving between my 3 and a few for others that like fried turkey but don't have the equipment or are afraid of the process. Then I will usually cook a couple more during the spring months and use the same oil.
I'll let the oil cool completely after frying and this allows any bits and pieces to sink to the bottom of the pot. When I pour the oil off back into a container I'll strain it through a fine mesh strainer. While sitting until the next use, even more stuff will settle to the bottom of the container and I'll not pour that stuff into the pot on my next use.

Exactly what I've been doing for 25 years.
Because I usually fry a bunch for Thanksgiving, that's when I get new oil. Then I save it using the method quoted above and use it for Christmas, Super Bowl, Mardi Gras, Easter, any time I find an excuse to fry a turkey. Then I use it up frying chicken wings or what not through the summer. Start with a new batch next Thanksgiving.

I take great care with my oil each year and typically get 3-4 years from a box before I recycle it. I let it cool and settle then use a ladle to filter it through one of those reusable covfefe filters.
Also take care when cooking, I watch the temp close enough and keep it from getting too hot and browning the oil.
