Not really...it was an affectionate name as far as I was concerned.He was a good deer dog, but I always drew some unwanted attention when I called him...."HERE DAMMNITTTT!!!!" And I'm a pretty loud guy...shocker.

a little different touch...I guess I can not get the Cuban out of me -lol

when I brown the sausage and the chicken (as I am browning it)I sprinkle a little sugar by hand.

it gives it a very lite caramelized taste...
about one teaspoon for the entire pot.

BTW GUMBO changes from each part of the state to another, as IN THE OLD DAYS, people used what was readily available.
