Tonight’s Project - Pepper Vinegar

I got some cayenne peppers from a friend and some direction from this board and others. This is the result of the advice from multiple people.
Cayenne, vidalia sweet onions, and whole peppercorns were places in the bottles after the bottles were boiled for 10 minutes. Then, boiling salted vinegar was placed in the bottles. After this, the bottles were closed and then returned to the hot water, brought to a boil, and then allowed to cool to room temp before removing. Now, to let them settle for a few days. I can’t wait to try it on some rice and gravy with some good smoked sausage!

Just curious, why do you have to boil the parts separately before you boil them in the bottle?

I have never done this before so I took every opportunity possible to kill potential bacteria. The only one that I am concerned about is botulism, which in theory should not be able to live in the vinegar environment. I let the filled bottles stay in the hot water for so long to attempt to get a “Sous vide infusion” type effect. As to it’s necessity, or effectiveness, I can not speak. It just seemed like a good idea.

Where did you get the bottles? When I do mine I pack it as full as I can get. And then reload when they are empty, but usually its a smaller type Tabasco bottle

I got these bottles at hobby lobby of all places. They have a ton of those snap top bottles and bottles with corks.
