It seems like every time I try to inject meats before I cook all of the injection just comes right back out of the puncture. Am I doing something wrong or is that normal? What is the proper way to inject meats before cooking?

If doing something like pork butts sometimes I leave them in the cryovac and inject through the bag and set in the fridge until I'm ready to dry off and season the outside. Some injection will always leak back out but at least in the bag I'm assured it's still doing something for the meat. Otherwise inject on angles and hold hold finger over the injection hole for a moment. Sometimes oils will coagulate and not come out as much.

Brine first, it opens the capillaries and veins. Study up on that.
