Time of year that gumbo threads are ramping up

I love it. I’m actually making one tomorrow. It’s my all time comfort food.
Several years ago when I first started making gumbo I would use the slap ya mama gumbo mix. It worked. But when I finally got brave enough to do my own roux there was no looking back.
I enjoy the whole process of cooking gumbo. My wife and I usually hang out in the kitchen while I’m stirring roux and she’s on beer duty. When you drop the trinity in the roux the house fills with the best smell in the world. When we finally sit down to eat my kids tell me I’m the “best gumbo cooker ever”
The best part is eating the leftover the next day, when the gumbo is so much better.
