To call that hot mess gumbo is an insult to any and all gumbo dishes ever fixed since time began.

When I was a student and didn’t really know how to cook, I came up with a gumbo using the crock-pot. Put in cut up whole chicken, sausage, onions, bell pepper, celery, okra, sprinkles of Tony’s. Mixed up Tony’s powdered roux mix with water and filled the pot. Let it go over night, then use tongs to break up the chicken and remove bones. Serve with rice and file’.

It was pretty damned good. My roommate laughed at it until he tried it, then he started asking when I was going to make it again.
