I like it over rice or grits and that's it. I make a crawfish pie filling, which is similar for pie shells and puff pastry.
I don't like it over proteins like meat etc... It sort of grosses me out to see that and the flavor overpowers the protein.
I don't mind a little bit over a piece of fish but not meat or poultry.
I do like a little bit over fried green tomatos fried with seasoned cornmeal.

I might like this. Sort of a Cajun version of eggplant parmesan, but with fried green tomatoes and etouffee.
