Can this be used for anything like bacon grease would be used?

You could experiment with making a roux with it, make it and taste it. Maybe make a roux based gravy. I was watching Cook's Country a few minutes ago. They were making grillades. She browned the floured blade chops in oil and saved the oil for the roux. Now, this would have been a mixture of oil and fat from the chops which had some nice fatty parts. Maybe mix a bit of the fat in some oil.

I use it to make a sauce for the butt. First separate the fat from the sauce. Then I reduce the sauce an bit. Mix this with your favorite BBQ sauce and add fat back in (tasting as you go) for a nice rich flavor.
