Thanksgiving Turkey Breast Recipes

The wife is insisting on a ham this year, so to supplement, I am planning to cook a turkey breast We have about 9 adults and 3 kids, so I assume this will be enough protein.

Anyone have a good simple turkey breast recipe?

I've got two I'm gonna cook. Orange juice brine mixture, shoot it up and smoke on Primo Thursday AM.

Definitely brine. Then I would smoke it, but you could roast it.

Here's one we've enjoyed. It's from a 1983 Southern Living annual cookbook.

Cider Baked Turkey Breast

1 (5 to 5-1/2 pound) turkey breast
1-1/2 cups apple cider
1/4 cup soy sauce
1/2 cup apple cider
2 tablespoons cornstarch

Place turkey breast skin side up in a large roasting pan; bake at 450 degrees for 30 minutes, or until skin is crisp.

Combine 1-1/2 cups cider with soy sauce, and pour over turkey. Insert meat thermometer in meaty portion of breast, making sure it does not touch bone. Cover and bake at 325 degrees about 1-1/2 or 2 hours until meat thermometer registers 185 degrees; baste turkey frequently with the cider mixture.

Combine 1/2 cup of cider and cornstarch, mixing well; stir into pan drippings. Return to oven and bake, uncovered, until sauce is thickened. Transfer turkey to serving platter; serve with sauce.
