i made it as well. Tastes awesome. Adding the vinegar and msg today.
I made a couple cups of rich stock from the chicken that I’ll add to the gravy if it looks like we need a little more.
If you see this in time, take a pic of the finished turkey with the Bon Appétit spice blend.

Update: kept it simple and it was amazing:
I had carrots, celery, onion, and chicken stock in my drip pain on BGE.
I used 1/4 cup bacon fat (saved from another recipe) and 1/4 cup of the Turkey fat with 1/2 cup flour to make a dark roux. strained out the vegetables and added 6 cups of the hot turkey drippings and reduced it down. little pepper and was an amazing to the meal.

Y’all need some grease gravy in your life. My mom’s pork gravy, with turkey drippings, was the highlight of thanksgiving.
