I crave greens also, I don't know if I mean that mustard taste the same, but to me they both have that bitter, "green taste", i just taste a lot of similarity between the two, kind of like brocolli and cauliflower. If you cook either too long the cells break down and you get those sulfur compounds, I don't like that too much. I am not of the old school country cooking method of boiling them down until they die.

This thread might make me conjure up a pot of gumbo z'herbes this week.

I roast it on a cookie sheet with salt, pepper, red pepper flakes, fennel seed and olive oil at 350 for 15 min. Comes out a bit crunchy on the outside. Very good.

im using it in my juicer.

im more of a spinach/romaine guy for salads but its not terrible.

i do like it sauteed in EVOO though
