Summer Kitchen ideas (South Florida)

I am building a new house in South Florida, and plan on having a screened in patio and a summer kitchen in order to take advantage of the year-round outdoor weather. I have a couple of questions for some of you who have a summer kitchen that you designed, built, or inherited.

FYI - I would like to have both a charcoal and a gas option, so that means two grills. I would also like to have a fridge and a sink.

1.) Is having a grill inside the screen a no-no? Will the screen hold in smoke, bothering people who are sitting on the screened in porch?

I am thinking of having a screened portion of the patio and an unscreened portion, in order to keep the summer kitchen in the unscreened portion.

2.) Is having the grills and fridge outside and not under roof a problem? I will keep covers on the grills when not in use. The space under roof is limited, and I plan on having a dining area and a couch and chairs in that area. That means the grill will not be under roof. I've seen plenty of summer kitchens that are exposed to the elements, but I don't know how they hold up, so advice from anyone who has any experience with that.

I don't have a budget to add a roof, so the kitchen being exposed is probably unavoidable. Maybe having a fridge is a bad idea? Let me know.

3.) Any suggestions on building materials? I'm thinking about stucco that matches the house, and having the summer kitchen attached to the house at one end. Any advice on that would be welcome, as well.

4.) Any suggestions on types/brand of grills? I'm still researching and am thinking a gasser with a rotisserie, a side burner, and a Kamado type charcoal (possibly a Weber Summit Kamado, if I can get it built in). I want the gasser to be a mid-range built in, like Napoleon, Delta Heat, Blaze, etc - in the 2-3K range. Nothing too high end, but solid and well built.

I would appreciate any other suggestions and do's/don'ts you all may have.
