I'm trying to steam a large quantitity of shrimp (15-20 lbs). Had disaster last time when I just dumped all the shrimp in at once. The steam must not have gotten around all the shrimp and a few were uncooked on one side.

Is there a way, or a device that can steam that many shrimp at once? Or do I just have to do a bunch of seperate batches that are only 1 layer think?

Recipe for those wondering:
1/2 cup old bay lemon and herb seasoning
1 tablespoon louisiana crab boil
Sliced lemon
12 count shrimp
Steam for 6 minutes over mixture of beer, vinegar, and water

I don't think I have ever done 20lbs with this method but definitely multiple layers in big gumbo pot with thick bottom.
Little evoo
Layer onion, bell,(both fresh, not frozen), minced Gallic.
Shrimp, salt, pepper, season all.Repeat many times. Add a little crystal, worshtshire, crab boil. Lid on high heat. Roll shrimp over once or twice.

Get you some French bread baw.

Go with three batches. Shrimp are so easily over cooked. If you focus on the technique and ignore time constraints you'll be much happier.

Six minutes is too long. Try 3 to 4 tops

I also know this is not what you were asking but IMO you would have an easier time boiling that much at one time if that was an option.
