Stainless Griddle vs ....

Just broke out an old stainless griddle (I had never used) to go on top of my grill the MIL got me years ago. Seasoned it with vegetable oil (didn't have canola). Have cooked bacon and eggs on it without a shred of sticking and I am already addicted to cooking on it. I plan on doing smash burgers tonight since that seems easy enough.

My question to you gentlemen is this: what do y'all prefer, stainless griddles or the blackstone type top (i'm guessing that's iron?)

In fact, anything y'all can add here would be appreciated.

Yeah, I'm lost on what I am missing not seasoning mine.

I have both stainless steel and a cast iron flat top. I use the stainless steel more but def sear more on the cast iron.

doing fajitas tonight on the stainless steel.

Yep. I can already see that. My "smash burgers" were amazing but they had a hard time getting hot enough for that crispy exterior. Could be old burners. May have opened my top too much. Heat source isn't nearly as close as a real griddle with that topper.

Hibachi places use stainless griddles. You cannot cook restaurant style hibachi on a Blackstone because of this.
