Spinoff: Pork burnt ends

I saw a topic yesterday about pork burnt ends and decided try my hand at making some today. I have 3 lbs of pork belly cut up and seasoned overnight and plan on following this recipe .
I am using an electric pellet smoker and am going to make the Jack Millers/Sweet Baby Ray BBQ sauce (something else I have never tried).
Does anyone have any tips/tweaks to the recipe that is linked.
I will document and take pics and upload when done.

You can use just about any seasoning mixture you would use for pulled pork.
I cut into 1 inch cubes. Season all sides. Smoke at 250 for 3 hours uncovered and just on whatever rack will allow the most smoke.
Take out, place in aluminum pan, cover with butter, brown sugar and honey (or agave). I also throw in just a few sprinkles of hot sauce. Toss to get it all over. Cook on 250 again for 1 hour covered. You can actually just put them in the oven from here on out but if you want to throw them back on the smoker no big deal.
Take out, uncover and turn up to 300 for about 15 minutes.

I cooked some today. Used How to BBQ right rub, coated somewhat heavy. Smoked at 235 for 3 hours, wrapped in foil with brown sugar and honey and put them back on for 2 hours at 265. Came out wonderful, will certainly cook again they were a big hit with the family.
