Sous Vide-season in the bag?

I have a gigantic tomahawk ribeye that I took out the freezer, that is already vacuum sealed. Would it be a big deal if I didn’t season it in the pouch? I’ve always vacuum sealed my steaks myself and seasoned them with S&P before going in the water bath. What do y’all think?

I would prefer to thaw and replace in zip loc with seasoning and aromatics, but it wouldn't be the worst thing too cook and then season right before sear

I’ve never used thyme or any other aromatics.. do you find it makes a big difference in a steak?

I would just sous vide it in the bag it came in provided it has a good seal. Salt and pepper it just prior to searing.

"big" difference might be a stretch, but you definitely get some of the aromatics in the bite

my favorite is actually adding a dry bay leaf to the bag
