Softshell crawfish

Are these fried whole and where do I get some? .
A guy told me u can cut the eyes off a live crawfish and I will molt within a day or two is this true?

I recall seeing a story about some La folks who were farming them in big indoor pans. They have to watch constantly and remove the molters. They are sold online, but it looks like the season is just ending.
Garden & Gun has an article on cooking them. LINK
Not sure about cutting the eyes to encourage molt. Maybe he;s confusing the cleaning process. The magazine article says "To clean them, cut off the tip of the head behind the eyes with scissors, and remove the rock-like calcium deposits."
But I did see an article that talked about whether muscle or nerve damage can influence the rate of molt. So maybe so.

Many years ago a friend of mine lived full time in a camp along Chef Hwy. by the Rigolets and he did the softshell crab thing.
That is such a time consuming thing to do with having to wake up frequently at night to remove the busters before they start hardening up again and protect them from the ones that will prey on them.
I'd surely not want to do that with crawfish. The only softshell crawfish I ever see are the few that are slipped into sacks I boil in the spring, and then there are not enough to fool with.
