So I bought a small La Caja China(aka Cajun Microwave)..

The caja china was made for Cuban pig roasts. Main thing you should try to make in there is a Cuban style roast suckling pig.

I've got a large smoker already so I bought the small roaster that claims it can hold 2 pork shoulders, several chickens, or a large turkey. It wont fit a full size pig however.

do a ribrack. i'm sure that you know this already, but leave the skin up for your quan (cracklin) for an hour. then turn it.
