I spent entirely too much time searching online for various snoball, snowcone, shaved ice recipes to only find ones that add koolaid or extracts to simple syrup. I get it is a thick simple syrup but past the obvious add food coloring and extracts I thought the recipes would be more readily available.

Any help?

I have a friend that just takes 100% juice mixes and boils them down for simple syrups and uses those, they are delicious! While it does limit your flavors, it's easy!

Isn't that what they do in Hawaii for shave ice? If so, it's incredible.

Yes, the good shaved ice places use reduced juice often an upcharge for those over the "standard stuff". They also will add sweetened condensed milk too. It is incredible with some of the natural flavors like strawberry.
