Smothered Pork Chop Recipe

I'm looking for a good smothered pork chop recipe. I want a thin gravy and those of you that have eaten at Antlers in Lafayette know what I mean.

I think the only recipe on there involves buttermilk which will lead to a thick gravy, maybe I need to check again.

Season and lightly flour the chops
Heavily brown them on medium high heat. Should get a lot of stuff stuck on the pan.
Add water to slightly cover, scrape up all the good bits.
Simmer and reduce for 30 to an hour.
Serve over rice.

Instead of water, use apple juice (a tip from Paul Prudhomme on one of his early cooking shows). The sweetness is great for a pork chop gravy! And it doesn't add thickness.

lots and lots of onions

This is a solid recipe

Ingredients here

If you don't want a thick gravy, just omit the buttermilk and add more broth or water to your taste
