Overnighted 2 10# butts and two chuck roasts. Ribs last night for dinner, chicken brining overnight about to go on. PSA: Fresh Market has USDA Prime chuck roasts for $6.99/# and they are possibly as good a piece of beef as I’ve ever smoked. Just fantastic.

Good chuck roast is like the pork butt of beef. Really hard to mess it up and I've never had one not come out fork tender.
