Yes, way to strong for chicken. Some of those exotic woods are hard to get but I've had success with Applewood and chicken.

No, make sure you rinse them thoroughly after the brining. If you want crispy skin make sure the skin is completely dry before starting the cooking process.

Updated the OP with some pics. Weather was shitty and I was rushing to get everything done before kickoff so I didn't snap a ton of pics. Thanks for the advice everyone.
