Smokers and meat rubbers, fresh or store bought ground pepper?

I always use fresh ground pepper in my rub, but is there that big of a difference when using black pepper in a rub, that you will smoke or sous vide for hours?
I’m thinking fresh vs store bought ground pepper makes the biggest difference on prepared food (salads, potatoes, etc).
I know there’s no oils in store bought, but do you need the oils for the rub?

My opinion
I always go with already ground pepper in rubs, and freshly cracked when topping, finishing, cooking, seasoning about to eat foods.

Store bought course ground. They sell Bolner Fiesta brand at Academy which works well.

Store bought, but from higher quality vendors. There is a HUGE difference between McCormick and various store brands and vendors like Red Stick Spice, The Spice House, My Spice Sage, etc. I did side by side comparisons some years ago and the difference in smell and taste was phenomenal. The smaller more artisanal shops products were so superior it was startling.

If the grind is the same, 8 or 9 out of ten posters here would not know the difference if they walked in and tasted a piece of smoked meat that had been seasoned with store bought black pepper.
I am one of the 9 who would offer a guess and, based on taste alone, have a 50% chance of being right.
However, if you want to grind your own black pepper (I do grind mine at least some of the time), go ahead. Good men and women have died fighting wars to assure you have the right to use the pepper you want and then to claim I am wrong.
