Don't see your process anywhere?

Done it this way for the last 4 or 5 years for the holidays and there are never any leftovers. Perfect smoke flavor and they're extremely moist.

But I'm sure yours is much better

This. Definitely brine it in a salted veggie stock first, though. Almost impossible to dry it out if you brine it and then spatchcock it before smoking. Injecting butter, oil, etc doesn't hurt it one bit, either but I stopped doing that when I started brining my birds.

I dry brine mine up to 2 days in advance.
