Smoked my first pork shoulder

Celebrating alajones4 graduating high school all weekend. Had a family and friends gathering at the Jones homestead today. The highlight was this pork shoulder.

So I brined it all night with salt and molasses. I thought it would take about 8 hrs to cook. About 4 am ( should've been earlier)I woke up and had the smoker going by 4:30.



I gave the pork shoulder a good rubbing with about 50% leftover Cajun seasoning and 50% brown sugar.



Got it going about 4:45, hoping for a 1 o'clock eating time. Then had a cup of coffee.



A short 11 hours later, it was done. A full 3 hours longer than I thought.



Placed it into a pre-warmed crock pot and pulled it apart. It was delicious.



The shoulder shared a smoker with a pork belly slab. It was also delicious and got done much earlier so we snacked on it for a while.



Great success. Should've started the night before if I wanted it done sooner. I know I could've put it in the oven but our control board went out a month ago and $600 later the appliance repair guy still hasn't figured it out.

Anyway, great day overall and great food.

ETA: its an old Brinkman electric. Nothing fancy. I used chips, should've used chunks because the chips burnt up to quickly.

Looks delicious.

Nothing wrong with using the oven, if you have to.


Way to adapt and overcome.

What temp were you smoking it at? Next time bump it up to 260-280 and it should get done in 8hrs or so. Also, no real reason to brine but that's your choice.

Looks good though. If you want a little more flavor, finish it off with some apple cider vinegar and some crushed red pepper after you pull it for a little bit of sweet heat to take it up a notch.

ETA: DEFINITELY chunks over chips

Looks great. You can always foil it to speed things up in a crunch.. I had to do that Saturday and it still turned out awesome.

I'm not sure what temperature it smokes at. It just plugs in, no settings.

I put in a thermometer and pulled it 1 hour after it hit 180.

It also cooked down quite a bit in the crockpot.

Hmm, I typically pull mine off the smoker when internal hits 200-203°, then rest about 45 min before I pull it.
