Smoked meatballs and sauce

This took about six hours. The ball build, the smoking and simmering the sauce. The pancetta in the balls was great. Grilled corn smothered down with onions, tasso and heavy cream. Came out very good.

I tried smoking meatballs a few weeks back, and it was a mixed bag. Daughter and I loved them, but the rest of the family said it was oversmoked. I think I need to put just one small piece of smoking wood next time.

What did you do? Did you let sit in smoke the entire time? I want to get this right, because it was close to being killer. I did mix shaved parmesan in mine, and I highly recommend. The melted shaved pieces were a nice feature when chewing.

I smoked the balls on 300 for 30 minutes on my Traeger so it wasn’t a very heavy smoke. But could definitely tell.

at 300 a pellet grill does not produce a ton of smoke. Have to go much lower, 180-220'ish

I agree. Didn’t want to over smoke. To much smoke plus heavy tomato sauce probably would be bitter.
