copied from the christmas thread to hopefully get a few more eyeballs on it. trying not to screw up dinner tonight.
so this is my first time smoking a beef tenderloin on the rectec. with the cold weather i was worried it would take forever to get to temp. so now i've got a beef tenderloin at 130 degrees and it doesn't need to be ready for 2 more hours. haven't seared it yet.
what would y'all do ?

Take it off the grill until you're ready to sear. I'd stop the cooking process for a bit.

i've got it in the oven which is turned off to hold some heat. you think searing it will get it back up to eating temp if done in an 1 to 1.5 hours?
don't want the middle to be too cold.

I don't think that will be any issue. keep it room temp or slightly above. Sear before eating. If people are complaining it's too cold in the middle or something then kick them out of your house.

That's a damn fine chateaubriand PT.
So the Rectec just adjusted itself and cooked along right through the cold? I've owned one for a couple of years and haven't tried cold weather smoking yet, but its not surprising.

I put a brisket on mine Thursday night when temps were around 20… held perfect temps all night, just burned through more pellets

Cooking on one now and temp is 19 degrees... I bought a welding blanket to wrap around it and it seems to be helping.

Yes. I’m by no means experienced in this (obviously). Grill held temp great and I made a grand total of zero adjustments to the heat until it was time to sear.
