Skirt Steak on the grill

I picked up some very thin skirt steaks today, with the intent of flash grilling them on a very hot grill.
I got the skirt steaks - they were looking fresh.
I made some marinade. I took my regular homemade steak rub and added some canola oil, chopped garlic, and lemon juice.
I put the marinade on both sides of the steak and worked it into the meat.
Stuck 'em on a flaming hot grill for about 2-3 minutes per side. When this thin, I was looking for the nice char on the outside, not necessarily a medium rare...
I also sliced up some potatoes and addes salt, pepper, rosemary, garlic, and canola oil. I grilled those, as well.
Added some fresh spinach cooked with salt, pepper, vinegar, and lemon juice.
All in all, a success. Simple and delicious.

A more vibrant display of unrepentant culinary mastery I have not seen.

Don't know what that means, but OK!

Looks great.
I like making soft tacos with skirt steak.
One of my favorite cuts. So much flavor
