Shun Premiere Chef, Santoku, or Shun Ken Onion?

8" Chef

Santoku

I like the way both feel in my hand, as I have large hands and prefer the larger handle. I've read good reviews online. Do any of you have much experience with Shuns? Any others highly recommended?

I have 11 Shun Classics. Really enjoy them. Have had for a couple
of years.

Bought my son the 8" Chef, the 7" Santoku and the 4 "
Utility for Christmas. His are the Premier.

I own the 7" Ken Onion Santoku. Also a 4.5" Ken Onion and a 5" Classic Santoku.

I just bought the two smaller a month ago because my wife would avoid the large Ken Onion. She said it was too large for her hands.

I love all 3 of them, and use them daily. We actually held the premier and the classic you are looking at. The premier is really cool, it feels very light and thin compared to my Ken Onion.

The large Ken Onion fits my large hands perfectly. The grip on it more natural to my style. You pinch the bolster, and the knife balances perfectly.

You can't go wrong with any of them. I've owned shun for nearly 2 years now, and absolutely love them. Worth every penny. With that said, go to Sur La Table. They have all 3 you are looking at in stock. Hold them and judge for yourself.

I was given the 8" chef as a wedding present and I love it. No complaints at all. It's got good weight, feels nice in the hand and is sharp as shite.

I re-read your original. You'll probably like the Ken Onion the best if you have larger hands. The bolster is very comfortable. You could probably hold it like a sword if that's your style, but it's made to be held "choked up" near the blade.

I cut all sorts of shite when I bought mine. I went through the fridge looking for crap I could slice and dice.

Ah, makes sense. I was looking for it near my cigar store in Towne Centre. I was thinking that it was there.

Cool, glad to help. I'm curious if you find it as comfortable...keep us posted if you get around to trying them out

I've got the 8" Classic. Had it for about 1 year now. Its starting to lose its edge. Can anyone recommend a good sharpener? I've got a honing steel.

I sent mine off to Texas to have it sharpened. Shun used to do the sharpening, but switched to a different system. You have your choice of a few sharpeners to send off to at a discount rate.

It came back razor sharp, but I don't particularly care for the results. It appears to have some polish marks that took away from the overall damask appearance. They used the "Perfect edge" sharpening system. It appears to be a series of abrasive belts to get the edge.

I love this Ken Onion knife. However, I thought I kept good care of my knives but I have found a couple of knicks in the blade. Did not notice how or when they get there. Very fine but tempermental edge.
