Seasoning for pork sausage

Looking to try to make my first batch of pork sausage soon. Will be doing pork and green onion sausage. Seasoning the whole thing with slap ya mommy seems a great way to make the sausage salty. What do y’all recommend?

Go to Rouses. Ask them for a pack of their green onion sausage seasoning ($5). Seasons 25#

If you want to go another rouse, look into Leggs Old Plantation Seasonings

Here's the recipe I use and so far I've had no complaints about how it tastes from those that have had it. I'll cut the recipe back for 2 lbs. of ground pork, but I usually make larger batches.

2 lbs. ground pork
2 tbsp. Cajun Seasoning---I use Slap Ya Mama
2 tsp granulated Garlic
1 cup chopped green onions
2 tbsp. black pepper

Add all ingredients, mix well to blend all the seasonings and case it up or make patties. I case up all my sausages except Italian since I use it loose most of the time.

That really depends on the size of the casing used. If wanting to make what I consider a normal sausage link like found in supermarkets, I'd say about 8 links, maybe less depending on how full you stuff the casing.

I usually do no less than 5 lbs. of pork for each type sausage I make.

Get a pack of Deep South Green Onion Sausage mix. It's good for 25 lbs of meat.

If you like jalapenos take about half of it and add a jar of sliced jalapenos to it.
