I have every designer pan under the sun. Le Crueset. Mauviel copper, All-clad. I cook 100% of my meals out of a $20 Walmart cast iron skillet. That said, gravy and sauces are hard because it’s too heavy to pickup and pour. Cleans like a champ. Food tastes better. My cast iron steaks are 5-Star. (Tip: Hardcore Carnivore seasoning).

Lots to digest there. Sometimes it comes down to what's clean, sometimes depends on the mood I'm in. I used to be die hard cast iron, until I procured an original magnalite. They're outstanding for gumbo. Got some Le Creuset dutch ovens in various sizes as wedding gifts. They're outstanding as well, but you can spend a fortune on them. My wife started buying some hexclad recently and they're great for weeknight suppers, super easy to clean. They all serve their purpose and are all great cookware. The Le Creusets make a mean graton that colors up a Jambalaya perfectly, saves all of that flavor.

All that said, I was at my brother's deer camp in west TX a couple of weeks ago and he forgot to bring a dutch oven for me to cook in(I had to airline in). I had to make do with a 12qt stainless steel stock pot and managed to cook a gumbo and Jamb in it two of the nights we were there. It was touch and go because I'd never done it, but both came out great.

Carbon steel is fantastic and way underrated. I have a de buyer omelette pan I wouldnt trade for anything else.

Staub, cast-iron enamel.

Smithey Ironworks, cast-iron

Made In and Heritage Steel for stainless steel.
