Sauce making tips - Stainless Steel

I recently got some stainless steel cookware, and I'm excited to use the fond on items I cook to create fun sauces. I've kind of stuck to using white wine on chicken, fish and red wine with pork and beef. After burning off the alcohol for a minute or two, introducing broth or stock with some finely chopped veggies and/or trimmings, and just reducing. While tasty, it's obviously amateurish and I wanted to see how everyone else is doing it.

A pat of butter is a nice finishing touch that thickens and flavors sauces.
Also, a shake of Wondra thickens sauces if that is needed and it blends in quickly.

I'll cook/sear my meat (pork , beef) in skillet to desired temperature using EVOO and butter. Remove meat and let rest, add onions and/or mushrooms to skillet. Cook down till browned, translucent or caramelized. As a thickening agent, add any of the following: butter, dab of sour cream, heavy whipping cream, some flour, or corn starch mixed in water. Add S&P and other favorite seasonings for taste. Serve over rice, or garlic mashed potatoes and top with the onions & brown sauce.

Turn the flame off and add the butter at end .
