Looking to make a good rum cake over the holidays. Anyone have a favorite recipe?

The king Arthur recipe is a good one that I have made before. The recommendation I will make is to use Appleton Estate Jamaican Rum, and 2 cups of lightly roasted pecan bits on the bottom of the (buttered and sugared) bunt pan.

don;t have the recipe written down. It is too easy to just go here to follow it.

I finally found an old recipe from my files. It is is a very simple one anyone can do.

Jamaican Rum Cake

Makes 10 to 12 servings.

Cake:

1 (18.25 ounce) box yellow cake mix or butter pecan cake mix
1 (3 1/2 ounce) box instant vanilla pudding
4 eggs
1/2 cup vegetable oil
1/2 cup Appleton Estate Jamaican Rum
1/2 cup water
1/2 cup chopped walnuts or pecans

Sauce:

1/4 cup water
1/4 cup Appleton Estate Jamaican Rum
1/2 cup margarine
1 cup granulated
Directions:

- Heat oven to 350 degrees F. Grease a tube pan or Bundt pan.

- Mix all ingredients for cake together except nuts. Place nuts in bottom of pan and pour batter on top. Bake 50-55 minutes, until a pick stuck into the cake, comes out clean.

- To make sauce: Combine all sauce ingredients together in a saucepan. Heat until boiling and allow to boil for 2-3 minutes.

- Pour over cake when cake is done and allow to stand for 30 minutes to overnight before serving.

- Store the cake on a serving platter.

I love rum cake! I hate to waste rum in a cake when it goes so well in diet Coke but....I do it and use a recipe almost like MD's but I use rum that's "on sale" and always use butter pecan cake mix. I find it comes out a lot better and I like butter pecan cake. The other difference is I use dark brown sugar and crushed pecans to coat the pan prior to pouring the the batter.

MD have you found a keto friendly rum cake yet?

I am partial to the Tortuga rum cakes from the Cayman Islands. We discovered that place many years ago while on a cruise. Back then their factory looked like a garage, and they would walk around out front with trays offering people free samples. Now it is a gigantic operation that ships world wide.

Tortuga Rum Cake.

Had a vendor give me one at Christmas one year. It was tasty.
