That is what I do with it except I use chicken broth. About 1 cup broth with a small jar of roux gets it chocolately smooth and ready to sauté your veggies

No , makes them a bit richer. Use a trinity.

Was the Jar roux hard to get out of the jar? I have tried some others but they were a pita to get out.

Yep, I use two spoons, one to scoop out and then the other one to scrap off.
