Roux shelf life?

I make my own roux in bunches at times and refrigerate it once it's made just to be safe, instead of storing it on a shelf in the pantry. I've had it last a few months before using it all up and have never had an issue with spoilage.

The roux you buy in the store has been processed to have a vacuum seal in the jar it's placed in. Check the jar to see if it says to "Refrigerate After Opening" on it, and if so, do so.
